About fiber, green beans are marvelous sources. Additionally, they have many proteins, carotenoids, and anti-oxidants with only a small number of calories. Green beans have nutrients described as being anticarcinogenic, helping prevent and even stop the spread of some cancers in the body. (4, 5, 6)] Further, peppers help fight inflammation, too, with their anti-oxidants. Raw and roasted peppers have anti-oxidant benefits. Roasting may increase or decrease those benefits depending on the pepper type and growth stage.
